Carpaccio di tonno

Tuna Carpaccio at AQUA Forte is not the typical raw fish seasoned with different condiments. Tuna is sourced fresh from the local market; our chefs personally select only the best cuts of red tuna they can find to serve to our guests a unique fresh delicacy. The tuna meat is then cured for 48 hours with a mixture of coarse salt, sugar, lemon and orange zests and Mediterranean herbs. It is then thinly sliced just before serving and finished with a Sicilian salad with fennel, oranges and herbs. A healthy and refreshing dish, perfect for the hot climate of Sri Lanka.

    Ravioli alla norma

    This is our AQUA Forte original variation of the famous Sicilian recipe “Pasta alla Norma”. Our chefs took the same ingredients but reinterpreted and invented a new dish that quickly became one of our best-selling. The homemade round ravioli are filled with the typical ingredients of the “Norma” pasta: eggplants, ricotta, pecorino and are served in the plate with a tangy reduced tomato sauce, dried cherry tomatoes, pecorino cheese and fresh and aromatic basil gel. A simple but great dish with all the rich Mediterranean flavors of sunny Sicily.

    Carbonara

    Carbonara is one of the most famous and typical Italian recipes. At AQUA Forte we serve it as authentic as you can find. Spaghetti comes directly from Italy, produced in the small town of Gragnano (near Naples), famous to produce the best pasta in the world; guanciale (cured pork meat) is used as per the original recipe instead of the common bacon (or even worse other meats, like chicken) and it is imported from Italy as it cannot be found in Sri Lanka. Pecorino romano is the other very important ingredient imported from Italy to complete this simple but flavorful dish. That’s why our Carbonara is so delicious and probably unique in the entire country!

    Porchetta

    We source our pork belly meat locally from our trusted quality suppliers and then it is cured in house by our expert chefs. The porchetta is prepared by opening the belly in layers and seasoning each of them with Italian herbs, salt and pepper. The meat is then rolled and slow cooked for several hours until the center reaches the desired temperature. Before serving we finish the slices of porchetta in the pan and serve them in the plate with roasted bell peppers and crispy chips of pork belly skin. A unique combination of flavors you can find only at AQUA Forte!

    Tiramisu

    Everyone knows tiramisu but unfortunately, because of its fame, around the world you can find so many variations of this dessert and most of the time it’s quite different to the original recipe that you would find in Italy. We prepare it by using a traditional recipe and with authentic ingredients like Italian mascarpone. Savoiardi biscuits are homemade to guarantee freshness and the tiramisu is assembled in your plate just before serving it, so the cream stays fresh and fluffy. Our only variation is to whip the mascarpone cream to give it an extra light texture. No wonder this is now one of our most popular dishes and our customers can’t stop talking about!
